Leftover Recipe 4: Maltese Pudding

Maltese bread pudding
Method
Tear some bread slices into pieces;  you may also add some pieces of dry cake/cupcakes etc which you might have left-over.  
Add 4 tbs cocoa, 200g sultanas, 3 tbs brown sugar or to taste,lemon and orange zest, 1tsp ground cinnamon, 1 tsp ground cloves, 1 tbs mixed spice, 100g candied lemon peel, 100g glace cherries, 100g pure ground almonds, some pitted dates.  


Mix well and add one cup strong coffee, 3 beaten eggs, 50g melted butter, 2 mugfuls warm water, one glass dry Martini.  Mix well and put mixture in a greased dish and level out.  Add some walnuts on top and sprinkle more cinnamon on top.  Bake in a moderate oven (fan electric 170) for about 45 minutes.  
Once cool add one more dash of Martini.


Leftover Recipe 2: Tomatoe Cake

Tomatoe Cake

Ingredients
1 cup dark brown sugar, 1/2 cup shortening, 2 eggs
3 cups all-purpose flour, 2 teaspoons baking powder,
1 tsp baking soda, 1 tsp nutmeg, 1 tsp salt, 2 cups peeled, seeded, and chopped ripe tomatoes, 1 cup nut mix.

Preparation
Preheat the oven to 180 F. Grease and flour a 13x9-inch baking pan. In a large bowl, combine the sugar and shortening and mix until creamy. Add the eggs, beating after each. In a separate bowl, combine the flour, baking powder, baking soda, nutmeg, and salt. Sift the dry ingredients into the creamed mixture and stir to blend. Add the tomatoes, nuts, dates, and raisins and stir thoroughly. Pour the batter into the prepared pan.
Bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
Cool.

 
The final result - fluffy sweet cake perfect with afternoon tea!

Freshers Week 2012


Hey there Greenies!

So.. Freshers is now over... We want to say thank you first of all to our members who took the time to man the stand excellently and also of course to you all who came and talked to us, showed great interest, and shared your views... it is really good to meet so many people that are genuinely interested in what we do!
For those who missed it, our stand had several different topics crammed into the space available: mainly human rights, animal rights and the environment

For The Humans

For our brothers and sisters, we set up an Amnesty letter-writing section for the case UA 270/12. This was quite a controversial case, and it was interesting to see your different views about it. At the end of the week we have over 35 signed letters, one of which holds the signature of a member of the EU parliament. These will be sent off next Monday in time for the 18th October deadline. If anyone is interested in letter writing, please refer to the letter-writing facebook group where we will be posting related events, and feel free to contact us for a ready-to-sign letter for this case.

We also had a section dedicated to fair trade merchandise. This was provided to us by L-Arka Fair Trade Shop, which is located in St Paul Street, Valletta.

For The Animals

For our furry, feathered and scaly friends, we were promoting the 8hour Petition, which is against inhumane lengthy animal transportation, and also distributing some contact details of sanctuaries around Malta, with particular emphasis on Noah’s Ark.
We were also distributing some informative material about shark conservation (European Shark Week) and educating fish consumers with our very own campaign for sustainable fishing and consuming, fish4tomorrow.

For The Environment

This is where we really got cracking! First off we launched our seed-growing venture with the distribution of free seed bags... check out our previous blogs for info on how to grow your own seedlings! We also had a small re-using display, showing useful stuff we made out of everyday waste, and some hand-made items for sale. Last but not least we had our usual notebooks made out of re-used scrap paper.

All in all a great outcome :] Don’t forget, we will soon start promoting our next event, a nature walk with Ramblers Malta – the date is yet to be confirmed but we are hoping you’ll keep the 20th free just in case ;) Later on this month we will also announce the date for our talk on Petitioning and Letter-Writing – combined with letter-writing for what promises to be a very interesting case! 


Yes we are being mysterious on purpose to keep you intrigued ;)

How To ... Grow Your Own Courgettes

As part of our freshers stand set up we had our lovely Simone design and create seriously cute seed bags for you all to take home and grow..Each day we will put up info about the different seedlings which also include radish, carrot and lettuce.  Come and pick up your free seedbag at our stand!

Meanwhile here's the know-how you need to grow tasty courgettes!

Courgettes are one of the easiest and most productive crops you can grow yourself. They are extremely fast - from sowing you can be eating your own within six weeks!!

What you'll need...
  •          Courgette seeds (from the Seed Bags ^.^)
  •          Multi-purpose compost
  •          Hand trowel
  •          Plastic pots
  •          Seed trays


Step 1. For early crops, sow in seeds trays on a windowsill. Sow one seed per cell into moist multi-purpose compost.






Step 2. Transplant you strongest seedlings into individual plastic pots
If you do not have soil area, change the pot to a bigger one and add compost.






Step 3. Choose a sunny, sheltered spot and if you have soil area dig a hole, adding a trowel of compost to the soil. Plant out your courgette plants 90cm apart. Place a layer of 5cm of compost to help the soil hold moisture.



Step 4. Keep your plants healthy by adding compost or liquid feed (organic ;)) when required. Harvest regularly when they reach 10cm long.




       Tips


  • Courgettes need plenty of water, but take care always to water at the base of the plant only or they'll rot.
  • Keeping the soil permanently moist is ideal.
  • The large fleshy flowers can be eaten, but fewer courgettes will develop if you harvest too many.
  • Remember that courgettes are young marrows, so you can get two different crops on one plant if you let some develop into marrows.

Hi there Greenhousers..

You might be wondering what has Greenhouse been up to lately...Well, we haven't been idling around! In fact we want to share with you just how happy we are about our last event! 

Cleanup

Greenhouse organised a cleanup last Friday in a joint effort with UWC Alumini at L-Ahrax Mellieha. Big Success!

Next on the agenda is Freshers Week Monday 1st October - Friday 5th October at the University of Malta

We are all working really hard to give you a stand which is both interesting, informative and fun... expect a few surprises ;) 

Just a few hints : the themes for this year are human rights, animal rights, fair trade, the environment and conservation.......all with an innovative twist. Some merchandise (fair trade and handmade items) will be available on the stand. We will also be promoting two events during the week, joint efforts with Bahrija Oasis and Ramblers Malta.. Come to our stand for more information !

Also if anyone is kind enough to spend a couple of hours of their time manning the stand, the hours are 8am-5pm (however even one hour helps) - please contact us via facebook or email  as soon as possible.

URGENT! Calling for Green Hands

Hola beautiful people!

I hope this email finds you well! I'd like to start off this email by thanking Ritianne Ellul and Marthese Formosa for organizing the Pre Freshers Greenie Workshop.

As you might be aware next week is Freshers' Week at the University Campus. We need a helping hand! If you have some time to spare kindly send in your availability when you could be present on Greenhouse stand to greet people and possibly recruit new volunteers / members. We would brief you prior to your ''shift''. We therefore invite you to send your availability in the form of day and time preferred. We shall then set up an excel sheet with the different times and decide on a time when briefing could be held. The stand, apart from the usual will consist of a green area with music and drinks. We will be also selling bags made from reusing old clothes, plants and a bookpublished as part of Say No Racism! Campaign. 

Another volunteering opportunity is our annual diary making workshop which will be held this Saturday. Kindly inform us if interested in attending.

A Microcosm of Junk- Freshers’ Week and the Production of Waste

The following is a PR issued during Freshers Week by Greenhouse on the matter of Junk Waste being distributed by various entities.

Greenhouse, a University students’ organisation working on sustainability issues and ethical consumption, would like to express its disappointment at the large amount of waste being generated during this year’s Freshers’ Week.

Throughout this week numerous companies pack the University quadrangle to lure students to buy their products. Day after day many of these companies and other entities hand over paper leaflets to passing students, informing them of their offers, discounts or freebies and many of these papers end up littering the quadrangle. By the end of the day, the place is filled with coloured papers flying around – a show of complete waste of resources. Paper and ink is used to produce such promotional material, only to end up discarded a couple of seconds later.



The University of Malta is seeing a resurrection of green values,with various initiatives both by a number of student organisations, trying to raise the awareness on the environmental plight, and the University administration itself. It would be commendable if this wave of environmental consciousness is reflected by a more ethical and sustainable way of organising events and activities on campus, such as Freshers’ Week. Companies promoting their products during Freshers’ Week should be prohibited from distributing promotional leaflets and should be encouraged to use other, less waste-generating methods.

Greenhouse insists that companies should put the environment and resource-use at the forefront of their day-to-day management and thus should minimise the production of short-lived resources that are converted into waste very quickly.

These companies should lead by example and together with the student organisations on campus they can promote a culture of Zero Waste.
